So I picked up a nice vintage Seiko 6619-8080 on Ebay as my second restoration project, but unfortunately it has not gone smoothly.

While the movement and dial are in good shape, the case is a different story. Looks like the previous owner somehow cracked it in half and then superglued it back together, preventing the bezel from fitting properly. During my cleaning it simply broke apart and is well beyond my ability to repair.
I'm eyeballing some NOS cases from other 6119 seikos - I'm planning for this to be a piece I actively wear so I'm ok splurging a bit, but want to be sure that I can slot in this dial. Any reason it wouldn't work? Thanks! I've attached an image of an example case I found on ebay.

No idea - I have very little knowledge of metal repair/welding outside of basic circuit board soldering.
I will say that if the cost of work would exceed ~$100 I'd probably rather get a NOS case - keeping the watch original isn't a priority on this one for me.

Yeah, sorry, that's a typo. It is a 6619. So that case I linked will work?

The only difference I can see apart from the crown is the 8310 takes a 33.5mm lens compared to 32.5mm on the 8080.

The only thing I'd question is how your dial would sit with that chapter ring.

Ok, I do have the chapter ring from the broken case and it's in great shape, though sounds like the potential issue could be it wouldn't fit exactly... I'll do some thinking on if I want to take the risk.

High chance the old chapter ring won't fit the new case.

Try messaging the seller to get the ID and see how it compares to your dial.
