At 7:34 in part 2 you were able to turn the gear train by turning the screw on the ratchet wheel.

when I assembled up to that point the ratchet wheel wouldn’t budge but the gears can spin freely.

Any suggestions?

Make sure all the wheels are free and turning before fitting the ratchet wheel. As Mark says the ratchet wheel doesn’t have a squire hole, so make sure that it is fitted correctly and engaging, and that the pawl is out of the way. Screw down the ratchet wheel using the correct screw, make sure the click is out of the way when screwing down, it is easy for that part to be trapped on the ratchet wheel and check the wheels run free.
